The black garlic has a soft, slightly chewy texture. It contains higher amounts of antioxidants and fiber than the white one. I used it to make a different version of the classic Spaghetti Aglio, Olio e Peperoncino and the result was a delicate combination of spicy and sweet flavour that I personally loved.

When I want to make a yummy but healthy dessert I use erythritol instead of sugar.

The Erythritol is essentially a sugar alcohol derived from fruits. It has zero calories and no carbs, so it does not raise blood sugar or insulin levels. When using it as a substitute in your recipes, apply proportions between 1.2 or 1.4. I used it to make a delicious gluten e dairy-free Chocolate Cake that I ate with zero regrets.
